What sort of tests are used?

There are literally thousands of tests which can be used.  Some of these tests are pen and paper tests.  Others use specific equipment.  Some trainability tests for electrical training require a candidate to wire an electrical panel.  Trainability tests for mechanical training sometimes require a candidate to disassemble and then reassemble a mechanical valve.
